BBQ Meatloaf

Place in a large mixing bowl:
  • 1 lb. ground chuck
  • 1/3 lb. hot sausage
  • 1 c. plain bread crumbs
  • 2 T. Wild Rooster Peppercorn Steak Rub
Mix the following well and pour into the mixing bowl:
  • 1 egg
  • 1 T. Milk
Prepare these vegetables and pour into the mixing bowl:
  • 1 green pepper (ground fine in food processor)
  • 1 sweet onion (chopped)
  • 2 celery stalks (ground fine in food processor)

Blend the meat and other ingredients well.

Put these 3 ingredients in a food processor and grind until fine:
  • 1/2 c. Diced Tomatoes (drained)
  • 1/2 of a fresh jalapeno
  • 1 large clove of garlic

Mix the tomato mixture with:

  • 1 c. Wild Rooster KC Kicker BBQ Sauce
  • 1 T. Worcestershire Sauce

Pour half the BBQ/Tomato Sauce into the meat mixture and blend well.

Put meat into a greased pan, and use the remaining half of the BBQ/Tomato Sauce to top the meatloaf.

Bake at 450 degrees for 50-55 minutes in glass pan, or 25-30 minutes if baked in muffin tins as mini meatloaves.
